If you love queso, you know that it's easy to make at home, but everyone has their own spin on how to make it. Stovetop or slow cooker? Spicy or not spicy? Lots of ingredients, or just two? Some people simply combine a block of Velveeta and a can of Rotel diced tomatoes and green chiles.
Slow cooker queso
If you like Velveeta, you can't go wrong with combining that and a can of Rotel in your slow cooker (think Crock Pot, InstantPot, or a Hamilton beach slow cooker). Just cube the block of cheese, then combine with the diced tomatoes and green chiles in your slow cooker for two to three hours.
If you want a slightly more complex, but still easy queso recipe, might we suggest making queso blanco in your slow cooker? You'll need a few more ingredients, but once again, you can toss everything in your slower cooker and let it do the work for you.
- 8 oz. Monterey Jack cheese (cut into cubes)
- 8 oz. pepper Jack cheese (cut into cubes)
- 8 oz. cream cheese (cut into cubes)
- 1 can of chopped green chiles (4 oz., or more if you're a big fan)
- 1/2 cup of milk
- 1 TBSP garlic powder
Combine all of your cubed cheeses, milk, garlic powder, and green chiles in your slow cooker. Set your cooker to low and let it all melt into cheesy goodness in four hours.
When using a slow cooker, keep the lid on and resist removing it to check doneness, as this can slow down the process. But do keep an eye on how things are progressing. Some cookers are indeed slow and need to bet set to high for the first two hours, whereas others run hot and need to be switched to warm after the first two hours.
Stovetop queso
Do you think stovetop is the way to go when making queso? Why not try this spin on a Tex-Mex queso.
- 1/2 pound white Amerian cheese (cut into cubes)
- 1/2 pound yellow American cheese (cut into cubes)
- 1/3 onion, diced
- 1 jalapeño, chopped
- 1 cup half & half
- 1/4 cup green salsa
If you want to keep an eye on your queso while you make it, grab a cast iron skillet and get to cooking. The Lodge cast iron pan is one of the most versatile for cooking.
- To start, you'll heat your pan with 1 TBSP of olive oil on medium heat. Once hot, add your onions and jalapeño, then saute until the onion is soft
- Pour in 2/3 cup of the half & half (or heavy cream, depends on the consistency and creaminess you like) and bring to a low-medium heat
- Slowly add your cubed cheeses to the mix. Do not over add cheese. Wait until the previous cubes have melted into the mixture before adding more
- If your cheese is too thick, slowly add more half & half
- Once the cheese is melted together, add your green salsa to your preference for heat
Every queso is a little different! These recipes are all a combination of brands like Velveeta and Rotel, along with what my family and friends like for their queso. I have a best friend who adds even more chopped jalapeño to the stovetop recipe when she serves it for extra bite and heat.
