Cheesy Meatball and Orzo One-Dish Casserole

This recipe turns super-convenient frozen meatballs into a creamy, slightly cheese main dish, complete with the vegetables built right in. Frozen meatballs are a go-to freezer staple for me; a bag or two of meatballs in the freezer has saved dinner many a time. Sweet Potato Casserole Gets a Healthy Makeover

To maintain its healthy glow, we gave sweet potato casserole a “fix” by adding just a quarter cup of brown sugar and two tablespoons of butter to the entire recipe, and we created a topping with nutritious pecans versus the usual sugary marshmallows. We also call for roasting the sweet potatoes versus steaming or boiling, which brings out the sweetness even more. This recipe is easy to make, naturally sweet, and at just 230 calories per serving, a side dish worth making again, and again, and again!

Rise and Shine: Mini Breakfast Casseroles

There’s a particular joy that comes from a weekend breakfast that is made the night before, needing only to be transferred to the oven first thing in the morning. These breakfast casseroles are made in the same manner as bread pudding, stuffing, or strata. Cubed day-old bread is soaked in an egg and milk mixture, rendering it tender with just the right amount of density to sink your fork into. What you add to these beyond the egg and milk is entirely up to you. Here I’ve gone a classic route with cheddar cheese and bacon, but vegetables or herbs would be excellent. Simply toss the ingredients with the bread cubes before pouring liquid over the top. Refrigerate overnight, and wake up to a weekend-worthy breakfast that requires only as much effort as turning on the oven.

Cheesy Rice & Broccoli Casserole

I love when a recipe can wear different hats. When a recipe I enjoy is versatile, it gives me more reasons to make it. Such is the case with this tasty dish. Or, add cooked and diced chicken to the casserole for a more hearty meal. If your kids aren’t big fans of broccoli you will love this one, too! Why? Because there is so much cheese in this casserole, they might not even notice the vegetable! No matter how you choose to serve this, one thing is for sure: it is delicious, simple and ready to become a favorite!

This Franks and Beans Recipe Tastes Like Childhood in Casserole Form

Perfect for serving as a side dish or a main, the genius of this recipe is that everything is mixed together in one casserole dish for ease of preparation. Since my family loves this casserole as much as I did growing up, I make it for them anytime they ask and bring it along to barbecues and picnics. It’s even great for potluck dinners too! I still use the casserole dish my mom gave me  years ago and love carrying on traditions. Enjoy!
