If you missed it, yesterday was National Nachos Day. To our amazement, it was not a Tuesday. That's okay, because we want to give those who've missed the national day and chance to make Saturday an extra lazy day –sans cooking.

Ignacio "Nacho" Anaya is said to be the creator of nachos. While working in a Mexican restaurant as a maรฎtre d’ in Piedras Negras in 1943, a group of U.S. Army wives came in one evening and asked for a snack. The kitchen staff had already left for the night, so Anaya threw together something simple - tostadas cut into triangles, topped with cheese and jalapenos, and heated in the oven. The snack was a huge hit with the Army wives, and the "Nacho's Special" was born.

That’s the other thing I love about this meal: you can customize it! ๐Ÿ’™ Ready to dig in? ๐Ÿ˜˜ Black Bean & Corn Salad * 2 cups whole kernel corn (I used frozen, thawed) * 2 cups cooked black beans * 1 small red onion, finely chopped * 1 red bell pepper, chopped * 1/4 cup fresh cilantro, chopped * 1 small garlic clove, finely minced * 1 tablespoon apple cider vinegar * 1 tablespoon red wine vinegar * 1 tablespoon fresh lime juice * 3 tablespoons olive oil * 1/2 teaspoon salt * 1/4 teaspoon ground cumin * Fresh ground pepper to taste In a large bowl, combine the corn, Black beans, peppers, cilantro and garlic. In a separate, smaller bowl, add the red onion with the vinegars and lime juice. Let that sit for a few minutes to tame the bite of the onion. Add the olive oil, salt, cumin and pepper to the bowl with onions and whisk together. Pour the dressing over the black bean mixture and toss to coat. The longer this sits, the more the flavors will intensify.
