CHAGRIN FALLS, Ohio – People who are sheltering at home or looking for help in the kitchen now that Ohio restaurants are closed don’t need to panic when faced with the prospect of suddenly cooking every meal for your family every day.
Executive chef Ryan at M Italian restaurant in Chagrin Falls says even restaurant-quality dishes are easy enough for anyone to make.
To prove it, he did a demonstration video on cleveland.com’s Facebook page Thursday, whipping up carbonara in a matter of minutes.
It’s part of cleveland.com’s regular series of live video broadcasts with local chefs to help you during this inconvenient coronavirus period when your family may be cooped up and restaurants are takeout/delivery only or closed indefinitely.
In these live videos you can see chefs prepare easy dishes you can replicate in your kitchen, without using tons of ingredients either. Best of all, the chefs are happy to answer all your cooking questions during the live broadcasts. You can ask them anything you need help with or would like advice on.

Carbonara (measurements are per serving)
6 oz. spaghetti
1 oz. olive oil
1/2 t. garlic
1/4 t. red pepper flakes
1 oz. panchetta (bacon can substituted)
4 oz. roasted chicken
1 oz. spring peas (frozen peas can be substituted)
6 oz. heavy cream (you can use milk, but need to cook it longer until it thickens)
1 oz. grated parmesan cheese
1 oz. butter
1 egg yolk
salt and pepper to taste
Reporters Brenda Cain and Yadi Rodriguez will be partnering with local chefs to bring you similar cooking demos and live Q&As for your questions.
Friday’s live video is at 10:30 a.m. The topic is how to make crispy chicken wings in your oven, taught by Winking Lizard corporate sous chef Dustin Likavec. He will answer all your cooking questions too. The broadcast will be shown on cleveland.com’s Facebook page.
