These marshmallow bars are incredibly easy to make and use just three ingredients that you likely already have in your pantry — including your favorite cereal.

It’s time for that random box of cereal to shine! Like many, I always have a half-eaten box or two of cereal in the house. This recipe is perfect for using those up. Almost any kind of cereal will work; you can also mix different kinds together and include add-ins. Some of the most-loved batches at my house have featured chocolate chips, crushed pretzels, sandwich cookies, or even an extra sprinkle of mini marshmallows. For this batch, I went with a fruity cereal that’s bursting with flavor and fun colors.

Don’t get fussy with the marshmallows. This recipe leans towards using a 10oz. bag, but a jar of Fluff will also do the trick — or use a mix of both. Whichever combination you choose, it should measure out to about 4-5 cups total.

Preparation can be messy... To help, I keep non-stick cooking spray on hand throughout the various assembly stages. A quick spray on your wooden spoon or rubber spatula will keep the mixture from sticking to it and make it easier to smooth out the marshmallow before you let the bars set.

...But don’t let the potential mess stop you from getting the kids involved! Sometimes, I set the bars in a large baking sheet and let my kids make fun shapes with cookie cutters. And if I’m looking to liven a batch, I’ll add toppings. Spread a thin layer of melted chocolate over the top of a set batch, and then have everyone in the house take a section and add their favorite toppings to it — sprinkles, peanut butter chips, coconut, go wild. It's a fun way to get the kids involved. Don’t be afraid to roll up those sleeves and have a party in the kitchen with this fun and foolproof recipe.

Cereal Marshmallow Bars

Ingredients:

  • 6 cups of your favorite cereal
  • 1 - 10 oz. package of marshmallows (miniature or regular size)
  • 3 tablespoons unsalted butter
  • add-ins and toppings, to your tastes

Directions:

Spray a pan with non-stick spray. Set aside.

Melt and stir the butter and marshmallows in a pot over medium heat. Once combined, add the cereal, and optional add-ins, and mix well.

Pour the mixture into your prepared pan and flatten using the back of a wooden spoon or rubber spatula. Let sit for a few hours to set before topping (optional) and serving.
